Caribbean cooking has been on the up in the UK for a while now, but of all the flavours to capture our collective taste buds, currently ‘jerk’ has to be the winner.  

Why? Well, not only does it taste amazing, but it can transform even the cheapest cuts of meat into a banquet. Is that music to your ears?

With two teenagers in the house, food is always an issue for me. When a meal is wanted, it’s wanted NOW, so I find that it helps to prepare it in advance. The beauty of ‘jerk’ is that once you’ve mixed a batch of seasoning – its really easy - we based ours on this recipe, using everything from the store cupboard.  Then all you need to do is slather it on some meat (chicken, pork, fish or goat work best) and stick in the slow cooker before work in the morning, then it’s ready to feed the rabble when they return at the end of the day.  Judge has 3 sizes of Slow Cooker so if you are thinking of getting one please check ours out here
